Rose del Deserto- Desert Rose Cookies
Rose del Deserto (Desert Rose, 沙漠玫瑰) is an Italian home style cookie that’s super easy to make. Perfect as healthy breakfast cookies or tasty afternoon snacks.
This cookie celebrates simple , homey taste of egg, flour and sugar, plus corn flakes~
I mean, who doesn’t love corn flakes?
Servings: 16 large cookies
Ingredients:
250g/ 2 cups all-purpose flour
110g sugar
150g butter, melted
2 tsp baking powder
Pinch of salt
2 eggs
100g raisins
1 tbsp rum - optional
50g pine nuts – optional
2/3 box corn flakes
Powdered sugar for sprinkling
*You can substitute raisin with chocolate chips, I just prefer raisin in this cookie.
Instructions:
1. Preheat oven to 355°F (180°C). Line baking sheets with parchment papers.
2. Soak raisins in warm water till soften. Remove from water and add rum.
3. Beat together eggs and sugar with a whisk or electric mixer till creamy texture.
4. Add in sifted flour, baking powder, salt, and melted butter to the mixture. Mix well until all are incorporated.
5. Stir in drained raisins and pine nuts to the flour mixture to form the dough.
6. Scoop out some dough into a small ball then roll it in the corn flakes. Press corn flakes into the dough so they stick well. Place the ball on baking sheets.
7. Bake at 355°F (180°C) for 15-20 minutes depending on the cookie size.
8. Remove from oven and cool cookies on a metal rack.
9. Sprinkle with powdered sugar before serving at room temperature.
