Lotus Root Soup with Pork Ribs
A comforting soup that says home!
This nutritious broth is packed with flavors of mildly sweet lotus root and meat taste. Warm yourself up in Winter with this simple and all-time favorite soup!
Ingredients:
1.3 lbs. (600g) pork ribs
2 lbs. (900g) fresh lotus roots
6 slices ginger
1 dried jujube mill 蜜棗
1 tbsp (rice) wine
Salt to taste

For blanching pork:
Water
1 stalk scallion
2 slices ginger
1 tbsp (rice) wine
Instructions:
1. Wash thoroughly with running water and peel off the skin of lotus roots. Cut into chunks or slices.
2. Blanch pork ribs by bringing it to boil in a pot filled with water, scallion, ginger and rice wine. Once it’s boiling, turn to low heat and cook for a few minutes before rinsing pork ribs in running water to clean off scum.
3. Place pork ribs in a deep soup pot. Add lotus root, new ginger, dried jujube mill, rice wine. Fill the pot will water. Bring to boil over high heat then simmer over low heat for 1.5-2hrs. Season with salt to taste.
